Both keep the full history on the booking. What changes is who sees the message and whether it costs you anything.
In-app messaging is included on every plan and costs nothing, no matter how much you send. The catch is reach: it only gets to clients who installed the app and left notifications switched on.
Texting reaches everyone with a mobile number, whether or not they have ever opened the app. That is the whole reason it exists, and the only reason it costs money.
A tick-box per event. Nothing you leave off changes, and nothing sends twice.
Texting sits on top of what you already have rather than replacing it. Tick an event and it goes out as a text instead of a push notification. Leave it unticked and it carries on exactly as it does today.
Carriers charge more for a picture, so the plans count them separately instead of averaging it out.
A plain text is one message. Go past 160 characters and the carrier splits it into two, so it counts as two. A photo is a different product entirely and costs roughly three times as much to send.
Which matters most for daily updates. A kennel texting one photo a day for every boarding dog will clear a month's photo allowance in about a fortnight.
Three texts covers a typical booking: the confirmation, a reminder, and a ready-for-pickup. So 500 texts is roughly 150 bookings a month.
Every price is in Canadian dollars, the same as your subscription, wherever you are. Past your allowance it is $0.05 a text and $0.15 a photo text. It joins the subscription you already have, so it stays one invoice on one card.

American mobile carriers require every business to register before it can send a single text, under a scheme called A2P 10DLC. They charge a monthly fee for that registration and add a surcharge to every message on top. Canadian carriers do neither.
